1 sea bass of 1 1/2 kg or so

Clean the fish and season with salt, black pepper, and lemon juice
Make incisions on both sides of the fish
Place it in a baking dish and brush with olive oil
Bake in a moderate oven (180°) for 40 minutes
While it's roasting, soak the onion slices in milk for 5 minutes
Drain and coat with all-purpose flour
Fry in hot vegetable oil
Sprinkle with salt
Remove the fish from the oven after cooking and place sliced onions around it
Garnish with lemon slices
Serves 4 to 5 people.
