1/2 kg of ground beef of first quality
Salt and pepper to taste
2 tablespoons of butter or margarine
2 tablespoons of olive oil
1 tablespoon of finely chopped green onion
1/2 red bell pepper cut into thin strips
1/2 green bell pepper also cut into thin strips
1 teaspoon of beef broth granules
1 teaspoon of mustard
4 ounces of dry Madeira wine
2 tablespoons of chopped fresh parsley
4 hamburger patties, cut in half, buttered, and toasted

Mix the ground beef lightly with salt and pepper to form 4 equal burgers
Melt the butter in a frying pan
Fry the hamburgers on one side for 4 minutes, flip, push to the side of the pan, and add the olive oil, onion, and peppers
After 4 minutes, remove the burger and keep warm
Continue frying the peppers, stirring frequently, for an additional 5 minutes
Remove from heat and keep warm
Combine the beef broth granules with mustard and wine in a pan
Simmer over low heat until well mixed
Reduce heat and cook for an additional 2 minutes
Add parsley
Arrange the hamburgers on toasted buns, top with peppers, and cover with some of the sauce
Garnish with mushrooms if desired.
