1/2 cup of cooked black-eyed peas (50 g)
1 small zucchini (180 g), sliced
1 medium-sized potato (120 g), peeled and coarsely grated
2 tablespoons of chopped parsley
1/4 teaspoon of salt
1 egg
1/2 cup of whole wheat breadcrumbs (45 g)
1/4 cup of grated Parmesan cheese (30 g)
oil (for greasing)

In a medium-sized bowl, combine all the ingredients and mix well with your hands until you get a homogeneous mixture
Divide into four portions
Grease a surface with oil
Using an 8 cm diameter cookie cutter or shaping with your hands, form a hamburger patty from each portion
Reserve on the greased surface
Heat a large skillet or frying pan over high heat
Grease it with oil and reduce the heat to medium
Fry two hamburgers at a time until they're golden brown (approximately 2 minutes per side)
Arrange them on a platter and serve immediately
