For the syrup
4 cups of milk
2 cups of water
1 tablespoon of lemon juice
1 tablespoon of orange flower water
For the dough
1 cup of melted butter
1 cup of all-purpose flour
1/2 kg of fine semolina
2 tablespoons of wheat flour, and 1 tablespoon of active dry yeast
Gergelim white seeds for garnish, enough to sprinkle over the dough

Prepare the syrup
Combine milk and water in a pot and bring to a boil until it reaches the thread stage
Remove from heat and add lemon juice
Let it cool
Then, add orange flower water
Prepare the dough
Mix well butter, all-purpose flour, semolina, wheat flour, and yeast
Distribute the obtained dough evenly in a medium-sized rectangular baking dish greased with butter, placing white sesame seeds on top
Let it rest for 3 hours at room temperature
Bake in a gentle oven
When baked, but not too brown, which should take about 30 minutes, remove from the oven
Cut the dough into squares in its original form and spread the syrup over all of it
Bake again until the mass is slightly golden (another 30 minutes)
Remove from the oven
Wrap the warm dish in plastic wrap to cool completely
Refrigerate
After refrigeration, cut the small squares and serve on a platter.
