4 medium yams
1/2 cup of cooked, shredded beef
1/2 cup finely chopped onion
1 tablespoon butter
1 tablespoon all-purpose flour
1 cup milk
2 tablespoons chopped parsley
Salt and pepper to taste

Wash the yams thoroughly with a vegetable brush and boil them in water with their skins until they're tender but still firm
Drain and peel
Cut the yams lengthwise and scoop out some of the flesh. Reserve
Fry the onion in butter until it's softened, then add the flour dissolved in milk
Cook over low heat, stirring constantly, until it thickens
Add the cooked beef and mashed yam to the mixture and stir well
Season with parsley, salt, and pepper
Remove from heat and spoon into the hollowed-out yams
Bake in a medium oven for 5 minutes
Serve immediately.
