Place the beef on a colander and marinate it with vinegar
Let it drain well and season it
Heat the oil and bacon in a pan, add the beef and fry until tender
Remove it with a slotted spoon and reserve
Add the onion and cook for 5 minutes with the pan covered until caramelized
Return the beef to the pan, stir, and deglaze
Serve immediately
