1 envelope of unflavored gelatin
1/3 cup of cold water
1 cup of natural yogurt
3 tablespoons of lemon juice
1/3 cup of dry white wine
Raspings of 1/2 lemon
1 tablespoon of vanilla extract
Adequate equivalent to 12 teaspoons of sugar
3 egg whites beaten until firm
4 leaves of mint

Soak the gelatin in cold water and heat it over low flame, stirring until dissolved
Let it cool and refrigerate until it starts to thicken
In a bowl, mix together the yogurt, lemon juice, raspings of lemon, wine, vanilla extract, and sugar
Add the gelatin and mix until homogeneous
Fold in the egg whites, mixing lightly
Divide the mixture into four portions and refrigerate until firm
Before serving, garnish with mint.
