1/2 kg of sugar
1 cup of crystallized sugar
1/2 cup of red food coloring
1/2 cup of water
A pinch of salt
2 egg whites
1/2 teaspoon of vanilla
Crystallized cherries, chopped

Mix the sugars, red food coloring, and water in a medium saucepan
Bring to a boil while whisking constantly
Cook without stirring over medium heat until it reaches a firm ball stage
Remove from heat immediately
While the syrup is cooking, beat the egg whites in a large bowl until stiff
Add the hot syrup slowly, whisking continuously
Add the vanilla and continue whisking until the mixture becomes firm (this takes around 8-10 minutes)
Let the mixture fall into spoonfuls onto parchment paper or aluminum foil
Shape the mixture into a swoop
Garnish with crystallized cherry
Let it rest for 2 hours
