Wash the lizard well, stab it a little with a fork and put it in a pressure cooker with water, vinegar, and salt
Cover the cooker and cook over medium heat for 1/2 hour or so
The meat should be cooked and firm
Remove from heat and let cool in its own juices
Drain well and, after the meat has cooled, cut it into thin slices using a freezer or, lacking that, cut it by hand
The slices should be fine but not so fine they fall apart
For the sauce, peel the onions, cut them into rings, and blanch them in vinegar and white wine
Add the tomatoes, tomato paste, rosemary, red pepper, black pepper, and salt
Let it simmer, taste to see if the seasoning is right
Remove from heat and let cool
Add the olive oil and foreign butter, mixing well
Now put it in a glass dish alternating layers of meat and sauce
Refrigerate it
Remove it from the refrigerator 30 minutes before serving.
