1 kilogram of crocodile
4 slices of bacon (60g)
Salt and white pepper to taste
200g of pork lard (or 1 cup of butter)

1/2 cup of water

Unroll the meat like a steak
Season with salt and pepper
Place the bacon on top of the meat and roll it up
Tie with kitchen twine (see photos above)

Place the meat in a pot with lard, garlic, and water
Bring to a boil, then reduce heat and simmer for 3 hours or until the meat is tender
If it dries out, add more water
Sauce
Melt the cheese and cream in a pot over low heat
Season with salt and pepper
Remove from heat, then skim off any excess fat.
