Season the meat with salt and black pepper to taste. Reserve
Place the butter or margarine in a saucepan and warm it in a low oven until melted
Add the flour and salt to taste, mix well, and stir occasionally
Remove from heat and place over the open lizard, salting with celery salt, adding eggs, rolling carefully, and securing with twine
Douse the olive oil in a pressure cooker, brown the meat on all sides, add water up to halfway through the meat, cover the saucepan, and cook for 40 minutes starting from when the liquid starts to boil or until the meat is tender
Remove the meat from the saucepan, cut into slices, and place in a dish
Cover with the formed sauce and serve immediately
