5 cloves of garlic, peeled and minced

4 cups chicken broth
salt and black pepper to taste

1/2 cup heavy cream
3 egg yolks beaten until smooth
1/4 cup grated Parmesan cheese

Sauté the garlic in the olive oil until golden brown
Heat the chicken broth
Add the garlic and seasonings
Simmer for 1 hour
Cool
Heat again over low heat
At this point, mix the heavy cream with the egg yolks
Add a little hot broth to temper
Put it all in the pot with the remaining broth
Let it simmer for 5 minutes, stirring constantly
Serve over toasted bread and sprinkle with Parmesan cheese
