Bring the shrimp to a boil with plenty of water and salt to cook
When it's red, remove from heat
Still warm, carefully remove the shell and reserve it
Remove the innards
Break down the shrimp meat into thick strips
Reserve it
In a pan, add olive oil and sauté the onion and tomato with scallion and parsley
Cover the pan and cook over low heat for 15 minutes
Add the shrimp, stir well and cook for a few more minutes to warm it up
Season with salt to taste
Remove from heat and arrange the stew on the reserved shrimp shell
Serve with white rice.
