Fry the seasoned chicken with salt, pepper, onion, garlic, tomatoes, fresh herbs, laurel leaves, and white wine until it's nicely browned and simmering in liquid, adding water gradually to cook thoroughly
Let it cool and shred the chicken, separating bones and skins
In a bowl, mix together mayonnaise, chicken, orange juice, and grated rind
Check the seasoning
Cut the sour oranges in half
Remove thin slices from each end for them to sit well on the plate
Remove the pulp, leaving the white pith and skin clean
Fill with the chicken mixture and decorate with orange slices and parsley sprigs
Chill in the refrigerator before serving
