For the meat sauce
25g dried mushrooms
50g fresh pork belly, diced
2 tablespoons butter
1 tablespoon chopped onion
1 teaspoon ground black pepper
2 tablespoons grated carrot
400g minced pork
1 cup white wine
1 cup tomato puree
2 teaspoons chopped parsley
Salt and black pepper to taste
For the white sauce
1/4 cup butter
1/4 cup all-purpose flour
2 1/2 cups milk
1/2 teaspoon ground nutmeg
For the pasta
4 cups all-purpose flour
3 eggs
100g cooked spinach, chopped
For dusting
1 cup grated Parmesan cheese

Wash the mushrooms well
Soak them in hot water for about 10 minutes
Drain and chop
Set aside
Make the meat sauce: fry the pork belly with butter until golden
Add the onion, black pepper, carrot, mushroom, pork, white wine, tomato puree, and milk
Simmer for about 1 hour, stirring occasionally, with the lid on
Add the remaining tomato puree and more milk
Simmer for 5 minutes, then season with salt and black pepper
Remove from heat, add parsley, and set aside
Make the white sauce: melt butter with flour in a pan
Remove from heat and gradually add milk, whisking constantly
Bring to a simmer and cook until thickened
Add nutmeg and season with salt
Set aside
Knead the pasta dough on a clean surface
Make a depression in the center and add eggs, spinach, and a pinch of salt
Mix by making circular motions from the inside out
Knead lightly until a homogeneous mass is obtained
Roll out the pasta very thinly using a pasta machine
Cut into strips about 15x25cm
Place in a tray lined with all-purpose flour
Gradually cook the pasta in boiling water until it rises to the surface and becomes soft
Place in an ungreased baking dish, then set aside
As you're building the lasagna, wipe excess pasta with a cloth
In a greased oven dish, make layers of pasta, meat sauce, pasta, white sauce, and grated cheese
Bake at 200°C for about 40 minutes or until golden
Let it rest for 6 hours before serving
