Pour boiling water over the coffee in a medium saucepan
Stir to dissolve
Add the simple syrup, vanilla, cloves, Jamaican peppers, and cinnamon sticks
Bring to a simmer on medium heat
Remove from heat
Let cool to room temperature
Strain into a clean glass or ceramic container
Add the brandy and stir to mix
Close well
Let sit for 2 weeks in a cool, dark place
Stir every 3 days
Strain through a double-layered coffee filter into another clean container
Check the flavor and add more simple syrup if desired
Close well and let sit for 3 to 4 weeks in a cool, dark place
Add 3 to 5 grams of whole coffee beans to each clean, dry liqueur jar and fill with the liqueur
Close well
Let sit for about 4 cups.
