1 kg of lingua
2 tablespoons of olive oil
1 medium onion, finely chopped
1 clove of garlic, minced
3 tomatoes, seeded and cut into pieces
1 cup of water
salt and black pepper to taste
1 tablespoon of parsley, finely chopped
1 tablespoon of green onions, finely chopped
1 kg of lingua
2 tablespoons of olive oil

In a pressure cooker, cook the lingua with enough water to cover it for 25 minutes
Remove from the cooker, clean the lingua and cut into thick slices, about 1 cm
Return the lingua to the cooker, add the olive oil, garlic, and onion and simmer for approximately 15 minutes without covering
Add the tomatoes and water
Season with salt and black pepper
Cover the cooker and cook for 30 minutes
Remove from heat, add parsley and green onions, and serve
Serves 4 people.
