750g pork loin cut into small cubes
2 1/2 cups water
1 tablespoon salt
1/4 cup soy sauce
1 clove garlic
1/3 cup apricot jam
1/4 cup cornstarch
1/4 cup vinegar
1/3 cup pineapple juice from a can
1 cup chunks of cooked pineapple in syrup

Bring the pork loin, water, salt, soy sauce, and garlic to a boil in a pot and let it simmer for 50 minutes or until the meat is tender
Remove the garlic
Strain the broth and reserve
In a pot combine the apricot jam, cornstarch, vinegar, and pineapple juice
Mix well
Gradually add the reserved broth, mixing well
Cook over medium heat, stirring until the sauce becomes thick and transparent
Season with pepper sauce drops
Add the pork loin and pineapple chunks
Stir and serve 4 to 6 portions.
