500 g of chicken breast cut into thin strips
1 small bottle of coconut milk
4 tablespoons of butter
1 small onion finely chopped
3 cloves of garlic mashed
1/2 teaspoon of grated ginger
2 tablespoons of chopped green scallions
1 cup of tomato sauce
Salt to taste

In a pan, melt the butter and sauté the onion until it's translucent
Add the garlic and ginger, cook for an additional 2 minutes and add the green scallions and tomato sauce
Season with salt and let it simmer
Add the chicken, stir and cook on low heat until the meat is tender
Pour in the coconut milk and bring to a slight simmer
Serve immediately.
