To make the apple sauce: peel the apples, remove the seeds, cut into small pieces and cook with sugar, cinnamon, lemon juice, and water for about 10 minutes over low heat
Remove the cinnamon and strain the apples through a fine-mesh sieve
Preheat the oven to moderate temperature (180°C)
To prepare the pork: rub the pork with salt and black pepper
Skewer with cloves
Place in the oven and roast for 1 hour and a half
Spread a thick layer of apple sauce over the pork and roast for another 30 minutes
Turn off the oven and let the pork rest there for 10 more minutes
