1 Cut the pork loin into slices without separating them from the skin
Season with salt and lime juice
Distribute the bacon and mozzarella between the slices
Secure with the skewers to give the meat a good shape and cover the pork with mustard
2 Place the meat in a baking dish and add wine
Bake at high temperature until, when separating the slices, the meat is cooked
If the glaze dries out, add more wine.
