1 pork loin, about 1 1/2 kg
1 large onion, finely chopped
5 tablespoons of butter or margarine
Salt and black pepper to taste
3 cups of breadcrumbs from fresh bread
2 cups of chopped mango without seeds and with skin
2 tablespoons of English Worcestershire sauce
2 tablespoons of lime juice
1/2 cup of hot water
1 tablespoon of wheat flour
1 cup of water

Clean the pork loin by removing excess fat
Open it to form a large cutlet
Fry the onion in butter or margarine until golden brown
Add salt, black pepper, breadcrumbs, and sauté for 5 minutes, stirring constantly
Add the mango, Worcestershire sauce, and lime juice, and sauté for another 5 minutes
Finally add hot water and mix well
Spread it over the pork loin
Roll it up like a roulade and tie with twine
Rub the meat with salt and black pepper
Place it in a moderate oven (180°C) and bake for about 2 hours, adding hot water as needed to keep the pan moist
When the pork loin is cooked and golden brown, remove it from the oven and transfer it to a serving dish
Remove one-third cup of the pan juices and add wheat flour dissolved in water, stirring constantly until thickened
Serve over the pork loin
Cut into 15 slices or so.
