1/4 cup of brown sugar
2 tablespoons of cornstarch
1/2 teaspoon of salt
1/4 cup of vinegar
1 tablespoon of soy sauce (optional)
2 1/2 cups of pineapple chunks from a can
1 green pepper cut into strips
2 small onions cut into rings
1/2 pound of cooked and cleaned shrimp

In a pan, mix together the brown sugar, cornstarch, and salt
Add the vinegar, soy sauce (if using), and pineapple juice from the can, and cook slowly until it thickens slightly, stirring constantly
Add the green pepper, onions, and pineapple, and cook slowly for 2 minutes more
Add the shrimp, let it come to a simmer
Remove and serve immediately with hot rice
Serves 3-4 portions.
