Grate the cassava and soak it in water
In a blender, mix the cassava with the water
Cover and cook in the microwave on high for 10 minutes or until the cassava is tender
Mash to obtain a pulp. Reserve
In another blender, combine the onion and olive oil, blend, and cook on high for 7 minutes or until the onion starts to caramelize
Transfer the mixture to the blender with the cassava pulp, add the remaining ingredients, mix, and cook on medium heat for 5 minutes or until the shrimp is cooked through, stirring halfway through
Mix again and serve immediately.
