    Use cooked sweet potatoes, whole or mashed.

    FILLING: for about 10 mashed sweet potatoes, combine 1 tablespoon of butter, one egg, and enough wheat flour to roll out. Mix everything very well.

    CHEESE - Fill the fritters with mozzarella cheese or Minas fresh cheese. Dip in beaten eggs, then coat with breadcrumbs and fry.

    MEAT - Prepare the sweet potato fritter dough. Divide the dough into several pieces and fill each one with a mixture of ground meat, cooked egg, and olives. Roll out in wheat flour and fry.

    EGG - Cook 3 eggs for 30 minutes to make them very hard-boiled. Peel each egg by cutting it into 4 quarters lengthwise. Separate the whites from the yolks. Then, mash the yolks well, adding finely chopped parsley, pepper, and salt. Take pieces of sweet potato fritter dough, fill with a thin strip of white and some mashed yolk. Fold the dough to form the fritters. Dip in beaten eggs with salt, then coat with breadcrumbs and fry in oil.
