zest of 1 lemon
1 tablespoon lemon juice
3 tablespoons melted butter

Wash the maces
Remove the seeds and top, then chop
Place in a buttered baking dish
Roast in a moderate oven until tender
Beat the egg with flour, milk, lemon zest, and lemon juice
Add the melted butter
Pour over the maces and roast for an additional 10 minutes
Serve 4 portions.
