Arrange the sweet potato wedges in a refractory dish
Sear with 1/4 cup of water and lime juice
Mix together the all-purpose flour, wheat flour, cinnamon, and salt to taste, and spread over the sweet potatoes
Place in a moderate oven (170°C) and bake covered for about 45 minutes, or until the sweet potatoes are tender
Remove the cover and top with grated cheese
Bake for an additional 5 minutes, or until the cheese is melted
Serve hot.
