Bring 5 liters of water to a boil in a large pot
When the water is boiling, add salt, stir, and then add pasta
Cook according to package instructions
Drain and reserve a cup of pasta cooking water
Place pasta in a warm serving dish and drizzle with half of the olive oil
Mix the grated cheese with reserved pasta cooking water and incorporate into pasta
Sprinkle with lime zest, stir gently, and drizzle with remaining olive oil
Serve immediately.
