1/2 cup unsalted heavy cream
1/2 cup cold water
1/2 teaspoon lemon juice
1/2 teaspoon salt
1/2 cup unsalted heavy cream

Mix the cream and water and refrigerate for 20 minutes
Blend in a blender at maximum speed, without letting it warm up
Add the salt and lemon juice.
