Peel the green mama and cut into slices, about the size of fried potato chunks
Place in a bowl with water and salt, and let it rest for 1/2 hour
While that's happening, heat up plenty of oil in a skillet
Add the slices, 2 or 3 at a time, and fry until they're lightly browned
Drain on paper towels
Beat the 3 egg whites into snow
Season to taste and add chopped scallion and black pepper
Finally, add the yolks
Put the skillet back over medium heat with the fried green mama slices
Add the eggs and let them fry
Then, flip onto a platter
If you want, you can also make the egg fritters separately and serve on top of the green mama or even serve the green mama with ground meat
Serve 4 to 6 portions.
