Wash the spinach and cook for 10 minutes
Drain over a strainer
Cut into strips
Beat the eggs with flour
Grate the cheese
Combine the cheese with milk, flour, and eggs
Add the spinach
Season to taste with salt, pepper, and nutmeg
Grease a ring-shaped mold of approximately 24cm in diameter and fill with the spinach mixture
Bake in a moderate oven for about 80 minutes
Meanwhile, pour boiling water over the tomatoes, rinse with cold water, and peel
Melt butter and carefully warm the tomatoes
Season to taste with salt and pepper
Unmold the spinach and place the tomatoes in the center of the ring.
