Cut the pineapple in half
Remove the pulp and pass through a sieve
It should give 1 cup of juice
Reserve the skin
Prepare the filling: mix the gelatin with 2 tablespoons of water
Heat over low heat, stirring constantly, until dissolved
Add 2/3 cup of pineapple juice, heavy cream, and sugar
Mix well
Place in the pineapple skins and refrigerate
Prepare the topping: mix the gelatin with 3 tablespoons of water
Heat over low heat, stirring constantly, until dissolved
Add the remaining pineapple juice and sugar
Mix and place in a small refrigerator
Refrigerate until set
Cut into cubes and top the pineapple filled
Serve chilled.
