1/2 pound soybeans
800g sugar
1 tablespoon water

Soak soybeans in water overnight
Remove skins and simmer until tender
Blend cooked soybeans with sugar, water, and a pinch of salt to form a dough-like consistency
Add 1/2 teaspoon vanilla extract and 1 teaspoon almond essence
Shape into flattened spheres resembling chestnuts and coat with a light mixture of soy glaze
Wrap in parchment paper if desired
