1/2 kg of confectioner's sugar
2 whole eggs
vanilla extract or almond extract to taste

Mix the cashews with the confectioner's sugar
Add the remaining ingredients and knead well until a smooth dough forms that is easy to handle
It takes a few minutes for the dough to come together
Use as filling for truffles, or shape into small balls like potato cakes and coat with chocolate
