Process the almonds in a blender
Combine with confectioner's sugar, egg white, extract, and coloring in a bowl
Mix until a smooth batter forms
Roll out the dough on a parchment-lined surface to 1.5 cm thick
Remove the paper and cut into 3x3 cm squares
Dip each square in melted chocolate
Place to dry on parchment paper
Before the chocolate sets, make marks on each truffle using a fork.
