Place the flour and salt on a work surface
Make a hole in the center and add the cold water, mixing with a fork until a dough forms
Knead the dough very well with your hands and then refrigerate it
Leave for 30 minutes
Open the dough on a lightly floured surface, forming a rectangle
Cover with well-chilled butter, cut into pieces and kneaded
Smooth out the butter with a spatula
Fold one side of the dough to the middle and then fold the other side over the first, forming 3 layers
Refrigerate for 15 minutes
Remove from refrigerator and place on a floured surface, with the narrower end facing you
Open again to form a rectangle
Fold again to obtain 3 layers
With a spatula, make a mark indicating that it has been opened once
Refrigerate for 15 minutes
Repeat this process 3 more times
