4 large cooked and mashed potatoes
4 egg yolks
4 tablespoons unsalted butter, melted
2 tablespoons finely chopped onion
2 tablespoons finely chopped fresh parsley
salt and black pepper to taste
2 eggs, beaten
1 cup amaretti cookies, toasted and crushed
oil for frying
4 large cooked and mashed potatoes
4 egg yolks

2 eggs, beaten
1 cup amaretti cookies, toasted and crushed
oil for frying
Mix the potatoes with the egg yolks, melted butter, onion, and parsley
Season to taste with salt and black pepper
Shape croquettes and dip first in beaten eggs then in crushed amaretti cookies, pressing gently onto the croquettes
Refrigerate until ready to serve
Just before serving, heat a generous amount of oil and fry until golden brown
Drain on paper towels and serve immediately
