3 tablespoons of natural low-fat yogurt
1 tablespoon of mayonnaise
1 1/2 tablespoons of freshly squeezed lime juice
1 1/2 tablespoons of pitted and washed green olives
180g of cooked and diced chicken breast, boneless and skinless
2 cups of chopped lettuce
30g of sliced avocado
1 medium tomato cut into 4 wedges
4 stuffed pimentos

In a small bowl, combine the yogurt, mayonnaise, lime juice, and olives
Cover and refrigerate for 30 minutes
In another bowl, mix the chicken
Add the yogurt mixture to the chicken and stir
Place 1 cup of lettuce on each plate
Top with the chicken-avocado mixture and garnish each plate with 2 tomato wedges and 2 stuffed pimentos
Serve 2 portions.
