1 medium broccoli
3/4 cups boiling water
2 cups scalded milk
4 tablespoons butter or margarine
2 tablespoons finely chopped onion
4 tablespoons all-purpose flour
2 teaspoons salt
1 pinch black pepper
1 slightly beaten egg
2 tablespoons grated cheddar cheese

Cook the broccoli in boiling water, uncovered, until tender
Puree in a blender with the cooking liquid
Add hot milk
Melt butter or margarine
Add onion and sauté for a few minutes
Combine flour, salt, and pepper
Gradually add to the mixture, stirring well
Cook for 5 minutes
Slowly pour over the beaten egg and mix well
Serve sprinkled with grated cheddar cheese
