4 cups cooked rice

Mix the cooked rice, Parmesan cheese, green pepper, and black pepper in a large bowl
Add an egg at a time, mixing well until the mixture forms croquettes
Dip the croquettes in oil or egg white and shape into desired form using 1 tablespoon as guide
Coat with all-purpose flour
Heat about 1/2 inch of oil in a deep frying pan over medium heat
Fry the croquettes until they are golden brown on both sides, about 3-4 minutes per side
Remove from oil and place on paper towels to drain
You should end up with about 45 croquettes
Suggestion: If desired, shape into small balls instead of croquettes and fill with ham, salami, or mozzarella cheese in the center.
