Make a mound with the flour and dig a hole in the middle
Add the fat, butter, egg yolks, and salt in pieces
Mix well and add the water gradually
Let it rest for 15 minutes
With half of the dough, line the bottom and sides of small pie dishes
Distribute a little filling in each one and close with the remaining dough
Squeeze the edges tightly to prevent them from opening
Baste with egg yolks and bake in a medium oven.
