Place the flour on a surface and create a depression in the middle
Add the olive oil, 3/4 cup water, salt, and yeast
Mix slowly, allowing some of the flour to fall into the depression
Mix until you obtain a dough
Let it rest while preparing the filling
Make the savory filling: fry the garlic in oil until golden
Add the spinach and cook until wilted
Remove from heat, add the nuts and pepper sauce
Let it cool
Prepare the sweet filling: mix the ricotta cheese with sugar, lemon zest, and raisins
Divide the dough into 2 portions and open each one into a thin rectangle
Fill each one with a different filling and roll up tightly, pressing edges firmly
Place in a baking dish and brush with egg
Bake in a hot oven (200°C), preheated for 30 minutes or until golden
Remove from oven and let cool
Cut into 12 portions (each dough yields 6 portions)
