In a large bowl, whisk together the eggs and sugar

Add the milk, salt, lime zest, and melted butter
Mix well

Gradually add the flour and mix until a dough forms
Cover with a clean cloth and let it rest for 1 hour

Roll out the dough on a floured surface to a thickness of about 2 mm
Cut into rectangular shapes, approximately 10 x 7 cm in size

Make a cut in the center of each rectangle, running parallel to its length

Heat the oil in a deep frying pan over high heat (see diagram on page 55)
Fry the fritters in batches, turning them occasionally until they are golden brown

Remove from the oil and let it drain on paper towels
Arrange on a serving platter, dust with sugar, and serve.
