3 eggs
1 1/4 cups of water
1 1/2 cups of all-purpose flour
1 teaspoon of active dry yeast
1 teaspoon of salt
1 1/4 cups of milk
Filling:
1 bunch of spinach with stems and leaves, blanched and chopped
2 tablespoons of butter or margarine
4 tablespoons of all-purpose flour
5 fillets of anchovies, drained and finely chopped

Filling:

4 tablespoons of all-purpose flour
5 fillets of anchovies, drained and finely chopped
Prepare the batter: beat the eggs
Add the water, flour, yeast, and salt
Beat until smooth
Add the milk and mix well
Pour the batter into a greased 31 x 45 cm baking dish
Bake in a hot oven (220°C) until the batter is firm and golden brown (about 40 minutes)
Remove from the oven
Turn onto a cloth or aluminum foil
For the filling: drain the spinach well and fry in butter
Season with salt and black pepper to taste
Add the all-purpose flour and anchovy fillets and cook, stirring constantly, until thickened and the flour is cooked
Spread over the baked batter and roll up from the smaller side
Serve by cutting into slices
