Soak the tomato in water and reserve
In a terra cotta dish, heat the olive oil and sauté the garlic slightly
Add salt, mussels, wine, and reserved tomato
Simmer over medium heat for 15 minutes, stirring gently at times, or until the mussels are cooked
Discard any that do not open
Just before serving, sprinkle with chopped parsley.
