Step 1: In a large pot, heat the oil over medium-high heat
Cook the onion until it starts to caramelize
Purposefully add the rice, lentils, and stir-fry for two minutes, constantly stirring
Add the carrot, celery, cabbage, and tomato
Season with salt, pepper, and mix well
Step 2: Reduce heat to low and continue stirring
Simmer everything for an additional two minutes
As the lentils become tender, slowly add the hot vegetable broth and let it cook until the lentils are mushy
Sprinkle chopped fresh parsley on top and serve immediately.
