3 1/3 cups of wheat flour
3 packets of active dry yeast (fresh)
3/4 cup of warm milk
1/3 cup of sugar
5 eggs
4 tablespoons of butter or margarine
1 tablespoon of grated lemon zest
1 pinch of salt
1 1/2 cups of cut pineapple chunks
oil for frying
1/2 cup of confectioner's sugar to dust

Place the flour in a large bowl, make a well in the center and crumble in the yeast
Add a bit of milk and 1 tablespoon of sugar
Add a little more flour from around the edges and shape into a soft dough
Let it rest in a protected place for 15 minutes
Add the remaining milk, sugar, eggs, butter or margarine, lemon zest, and salt
Mix well and over a floured surface knead until a ball forms
Place the dough back in the bowl, cover, and let rise in a protected place for 30 minutes
Gently press down the dough and shape into balls about 2 cm in diameter, filling each one with pineapple chunks
Let the mini-dreams rise again for another 15 minutes
Fry them in hot oil, turning occasionally to golden brown evenly
Drain on paper towels
Dust with confectioner's sugar.
