Preheat the oven to 400°F (200°C)
In a blender, combine rice, egg whites, milk, olive oil, flour, and yeast
Blend until smooth
Grease a small frying pan with a little oil and heat it well
Pour a portion of dough to form a circle
Cook over low heat, until golden brown on both sides
Repeat the process until all the dough is used up
Place each disk with a spoonful of mozzarella cheese, a tomato slice, and season with salt, oregano, and olive oil
Arrange the mini pizzas in a baking dish and bake until the cheese is melted
Serve immediately.
