1 cup cooked rice
4 large egg whites
1/2 cup whole milk
1 tablespoon vegetable oil
4 tablespoons all-purpose flour
1 teaspoon active dry yeast

Preheat the oven to 400°F
In a blender or food processor, blend together the cooked rice, egg whites, whole milk, vegetable oil, flour, and yeast until well combined
With a little oil, brush a small frying pan and heat it over low heat
Drop in one portion of dough at a time, forming a circle
Let it cook on both sides for about 2 minutes or until golden brown
Repeat the process until all the dough is used up
Place a spoonful of mozzarella cheese and a tomato piece on each mini pizza
Season with salt, basil, and olive oil to taste
Place the minipizzas in a baking dish and bake at 400°F until the cheese melts and bubbles
Serve immediately.
