Olive oil (for greasing)
1 tablespoon of salt
1 tablespoon of chopped parsley
1 tablespoon of thyme
5 cloves of garlic, minced
1 tablespoon of ground pepper, coarsely crushed
1.2 kg of chicken fillets
1 kg of beef strips
12 slices of bacon (400g)
1 xylar of water (240ml)
For the sauce

1 1/2 tablespoons of wheat flour dissolved in 1/4 xylar of water (60ml)

Preheat the oven to 400°F (hot)
Grease a medium-sized baking dish with olive oil. Reserve
In a small bowl, combine salt, parsley, thyme, garlic, and pepper, mixing until you get a paste. Reserve
On a flat surface, arrange some chicken fillets on top of each other, forming a rectangle approximately 12 cm x 25 cm
Spread a little of the reserved paste over the chicken
Cover with some beef strips and spread a little of the paste over the beef
Repeat the layers two more times, always intercalating the meats with the paste
Finish with a layer of chicken
Cover the top and sides with bacon, forming a package
Tie with twine to maintain the shape
Place in the prepared baking dish and cover with aluminum foil
Bake in the preheated oven, occasionally moistening with water, until tender (approximately 1 hour and 40 minutes)
Remove the foil and untie the twine
Transfer to a serving platter
Prepare the sauce: add water to the remaining sauce in the baking dish and let it simmer at high heat, scraping with a wooden spoon
Strain through a fine-mesh sieve into a small pot
Add the flour dissolved in water and cook at high heat, stirring constantly, until thickened (approximately 2 minutes)
Transfer to a sauce boat
Cut the meat into slices and serve accompanied by the sauce
